Finger Lickin' Good




Cassie's Famous Green Chile Chicken Enchiladas


Ingredients

Flour Tortillas
NM Green Chile
2 Cans of Hatch Green Chile or Old El Paso Green Chile sauce (depending on the size of the casserole dish) Sold at Whole Foods
8 ounce Philadelphia Cream Cheese
1lb Boneless Chicken Breast
1 bag of Fiesta Shredded Cheese
1 clove of garlic
Pepper/Salt
Olive Oil
Casserole Dish
Cooking Pan
*Thaw Green Chili 

Directions 

Preheat oven 10 min @ 345F


Remove stem from green chile and clean under warm water ; Chop green chile into pieces (1 cup)

Chop garlic clove into small pieces

Cut chicken - 1inch pieces and season to taste with pepper and salt

Heat olive oil in pan

Sauté  garlic in pan with olive oil

Add chicken to garlic in frying pan

After chicken is cooked, add green chili and cream cheese to pan, mix well

Cook 3-4 minutes until well-combined

Butter (i.e.  PAM) casserole dish 

Add chicken/green chili mix into a tortilla and roll tightly place in casserole dish (tip - place enchiladas close together)

Pour Hatch Green Chili or Old El Paso Green Chili on top of enchiladas

Add shredded cheese on top of enchiladas

Place in oven 15-20 min at 400F

Add a side or rice (My favorite is Goya!)
